Before the holidays arrive you need a homemade and easy coffee cake to bake for gifts and stash in the freezer for brunchtime entertaining. Blueberry Cinnamon Coffee Cake - made with my Simply Yellow cake mix - is one of my favorites. It is rich but light, full of cinnamon and fruit of your choice. Use blueberries now and use cranberries when they come into the stores later.
The heritage of coffee cake baking in our country has been about building community and deepening relationships with other people. Cake, coffee, and conversation encourage friendship and make us slow down. Find out how easy it is to bake a great coffee cake beginning with my natural mix.

Charity Spotlight: The Nashville Food Project
 


I love donating cake mix to a fabulous charity called the Nashville Food Project. The charity's mission is to bring people together to grow, cook and share nourishing food, with the goals of cultivating community and alleviating hunger in Nashville. One in five people in Nashville lacks access to enough food and 40 percent of all the food in Nashville gets wasted. Volunteers come in daily to cook meals from donated products such as mine as well as vegetables harvested from the gardens out back. I love to see how these volunteers use creativity to feed so many.
They often make cookies from my mix but most recently, they made muffins by scooping the Classic Chocolate cake mix batter into muffin pans. You can do this at home, adding a little cinnamon, shredded zucchini, a mashed banana, and even miniature chocolate chips to turn my mix into simply wonderful muffins.
