The Cookie Countdown, Week 3!
Chocolate-Cherry-Coconut Macaroons
It's the third installment of our holiday Cookie Countdown! Each Monday until Christmas, we're sending you one fabulous cookie recipe. Bake them up for a gift, bring them to the next party or add them to your own stash.

Today's selection features the tempting trio of chocolate, cherries and coconut!

Chocolate-Cherry-Coconut Macaroons

These moist, chewy cookies are packed with chunks of dark chocolate, dried cherries, shredded coconut and toasted pecans.

4 egg whites
2 1/2 cups sweetened shredded coconut
1/4 cup sugar
2 teaspoons vanilla extract
Scant 1/4 teaspoon salt
1/4 cup dried tart cherries, coarsely chopped
2/3 cup pecan or walnut halves, toasted, coarsely chopped*
2 oz. semisweet or bittersweet chocolate, chopped, or 1/3 cup chocolate chips

1 Heat oven to 325°F. Line baking sheets with parchment paper. Combine egg whites, coconut, sugar, vanilla and salt in large stainless steel bowl. Place in large skillet of barely simmering water; cook and stir, scraping bottom to prevent burning, 6 to 7 minutes or until mixture is very hot to the touch and egg whites have thickened slightly and turned from translucent to opaque. Stir in cherries; cool.
