Baking season has begun, and it's a great time to grab my mixes. They're on sale now for holiday baking or for gifting to the baking folks on your list. 
I love to turn my Simply Yellow mix into a seasonal favorite cake. You just need a cup of pumpkin - canned or freshly roasted and pureed - as well as spices, eggs, and oil. Then, serve with a dusting of powdered sugar or a super-easy orange glaze.

Pumpkin Spice Squares 
Makes about 20 squares

1 package (18.25 oz.) Cake Mix Doctor Yellow mix
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger 
1/4 teaspoon ground allspice
3 large eggs
1 cup canned pumpkin (or pureed and cooked winter squash like butternut)
1/2 cup water
1/3 cup vegetable oil
1. Place a rack in the center of the oven, and preheat the oven to 350 degrees. Grease and flour a 13- by 9-inch baking pan and set aside.
2. Place the cake mix, cinnamon, nutmeg, ginger, and allspice in a large mixing bowl and whisk to combine. Add the eggs, pumpkin, water, and oil, and beat on low until smooth, about 1 minute. Turn the batter into the prepared pan, and place the pan in the oven.
3. Bake until the cake springs back when lightly pressed with your finger, 25 to 30 minutes. Remove the pan from the oven, and let the cake cool slightly while you prepare the glaze.
Orange Glaze: Place 2 tablespoons orange juice in a small glass bowl and heat in the microwave oven on high power for 10 seconds. Whisk in 1 cup powdered sugar until smooth. If you want a creamier icing, whisk in 2 tablespoons soft butter. 
4. Spread the glaze over the cake. Cut into squares and serve.

Baking at Home: Taste the Benefits

Every time I read a news story that America has stopped baking or that no one is cooking at home anymore, I do that checklist in my head of all the reasons we should bake and cook at home. 

1. GOOD FOR OUR SOUL.
Baking cake for others is an expression of love.

2. GOOD FOR OUR WAISTLINE.
Seriously! Most home-baked recipes are lower in sugar and fat than their bakery counterparts.

3. GOOD FOR OUR WALLET.
Have you seen the price of cakes and pies at local bakeries? Just saw a pear pie for $30 and an 8-inch carrot cake for $80 at bakeries near me. Preheat the oven, and get busy at home!

4. GOOD FOR OUR BRAIN.
Everything about baking is good for mental faculties. Calculating, measuring, substituting, timing, following directions. Baking has it hands-down over crossword puzzles. Plus, you can't eat crosswords!

5. JUST PLAIN GOOD.
Your home-baked cakes surpass anything bought. They taste better. They're fresh. They're made by you. And that is a benefit I'm just not ready to give up any time soon!
