Making American Cake

Last January, when snow blanketed much of the Northeast and I was barely into my New Year's resolution of more exercise and less chocolate, the photo shoot for American Cake began. So much for giving up chocolate! Photo shoots are 10-hour days of oogling over beautiful food and sneaking bites when you can. This shoot was like no other I had been a part of and took place over two weeks in the Rodale studios in Emmaus, PA. Best Frostings to Beat the Heat

Linda from Oklahoma writes: Hello, my grandson's birthday is in 2 weeks. What is better- buttercream or whipped icing - the party is outside at a lake. We live in Oklahoma and the temps are already reaching 90+. Any advice will be helpful, and thank you in advance. 

My answer: A buttercream is better than whipped cream for summer cakes, but if you use one make sure to chill the cake ahead of time in the refrigerator to make slicing less messy. And the best frostings for hot temperatures are the caramel frosting and chocolate fudge frosting, both made on the stove and spread onto the cake while warm. They set up on the cake and do not move in hot and humid weather.
