The Cookie Countdown, Week 2!
Chocolate Mexican Wedding Cakes
Welcome to the second installment of our holiday Cookie Countdown! Each Monday until Christmas, we'll send you one fabulous cookie recipe. Bake it up as a food gift, bring it to the next party or add it to your own stash.

Today's offering will bring a smile to the chocolate lovers on your list.

Chocolate Mexican Wedding Cakes

Also known as Russian Teacakes or Pecan Butter Balls, these nutty little cookies with their crumbly texture are one of the most popular on holiday tables. Here, they've been given a flavor twist with the addition of chocolate.

1 cup unsalted butter, softened
2/3 cup packed light brown sugar
1 egg yolk
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 1/4 cups ground walnuts
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups powdered sugar
